Ice cream, a very French delicacy

An abundance of high-quality raw materials, strong demand from tourists, innovation, and expertise: in Europe, France is the leading exporter of ice cream and the second-largest producer (after Germany) of this treat, which is increasingly enjoyed outside the summer season.

A pleasure that is increasingly shared

  • In 2025, the sector reached a record high with revenue of 1.6 billion euros.
  • This represents a 10% increase over the previous year and is three times the growth rate observed from 2016 to 2021 (+3% per year).
  • While 84% of French households mainly consume ice cream in the summer, 52% now also enjoy it all year round.
With some French specificities:
  • In the land of gastronomy, 34% of French people have already made their own ice cream.
  • When they don't taste their own production, 28% appreciate ice cream sticks (ahead of cones and tubs). All types taken together, this represents nearly 5 kg/per person per year.
  • And, with the underlying trend of "eating better", 70% of French people would be willing to pay more to consume products that include local and/or natural ingredients.

A constantly renewed offer

Purchased and enjoyed instantly, ice cream is constantly being reinvented: new snacking formats, inclusion of sauces or pieces, play on textures, (increasingly) original flavors, use of vegan and organic ingredients...
In 2025, the preferences of the 25.7 million French households that treated themselves to this indulgent treat were as follows:
  1. 41% preferred ice cream.
  2. Soft-serve ice cream followed with a 33% share.
  3. Sorbets accounted for 22% of choices.
  4. Popsicles remained the most popular format among single-serving products. 
The flagship product of "comfort food" is multiplying the opportunities to be appreciated, from the dessert at the end of a meal (it is particularly essential during the holidays with the Christmas log) to the gourmet break in the street or while watching a film in the cinema.
